Amber is a truly special restaurant. Serving a creative menu focusing on French cuisine, Executive Chef Richard Ekkebus uses fresh products from Japan and beyond. He runs Amber at the Landmark Mandarin Oriental in Hong Kong as well as Fifty 8 Degrees, the restaurant at the Mandarin Oriental Shanghai. Amber, with two Michelin stars and ranked number 20 of the world’s best 50 restaurants, presents an innovative and seasonal menu that seamlessly blends regional Asian ingredients and flavors with classic French cuisine. The wine list is world-class as well and the service, from the hosts to the waiters, servers, sommeliers, etc., was just fantastic. Also very friendly and accessible, which can be hard to find in a French Michelin-starred restaurant. After my wonderful degustation menu, I had a chance to sit down with Chef Ekkebus to talk about his background, his menu, his inspirations and his food.
